This chicken salad with apples and grapes is one of those easy weekday lunches I love! Being able to prep to have the lunch in my fridge has been key to my succcess in a healthy lifestyle. I mean the less things to do to have a meal is good right?

Finding new meals to stop from getting bored is part of the secret to sucess with WW! Now a fried told me about this and I fell in love with it. I personally am loving that I can find new ways to keep using coleslaw mix in low point recipes.

WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

Skinny Chicken Salad With Grapes Ingredients
Shredded Chicken Breast– You can make this as Crockpot Shredded Chicken, or you can substitute it with canned chicken or shredded rotisserie chicken.
Cabbage– Using store-bought coleslaw mix makes this so easy to do, but if you want, you can buy heads of cabbage and cut them up.
Celery– This will be diced to put in the salad
Red Onion—I love the taste of red onion, but you can substitute it with yellow or white onion if that is your taste preference.

How To Make Chicken Cabbage Salad With Grapes And Apples
Make your shredded chicken breasts if needed, or use canned chicken. I usedCrockpot Shredded Chickento make mine; I try to make this once a week to always have zero-point chicken on hand.
Dice your apple, grapes, celery, and red onion. If you aren’t using a coleslaw mix, prepare your shredded cabbage.
I used an apple corer to cut my apple and then diced the apple slices.
Use a food scale and measure your ingredients into a bowl with the cabbage as a base. I used meal prep containers for my salads for easy storage and eating.

You can swap almost anything that you would feel would taste amazing in this. Remember to verify if the ingredient is a Zero Points food or low calorie to fit into your macros.

- Apple Cider Vinegar
Weight Watchers Points Break down For chicken salad with apples and celery
The only thing with points in this recipe is the Skinny Girl Poppy Seed Dressing. And even still, you can get a lot of dressing for just one point; I love that the lower serving makes this a Zero Point salad for lunch! If you add other ingredients be sure to calcaulate the points.
- 3 Tablespoons is zero Weight Watchers points
- 4-11 Tablespoons if one WW point.
How to store chicken salad with grapes and apples
I prep min with out the dressing to store. These will be good for up to two days in your fridge in an air tight container.

Instructions
Make your chickens and shredded if needed.
