If I had todecide onone favourite traditional Bulgarian dish of mine, and trust me I’ve tried tonsof these, my choice would Banitsa (1)fallon Banitsa. Though a simple dish (but you know what they say:“Simplicity is beauty”.), Banitsa is a paradise for the senses. Its crispy crust and soft middle of melted cheese can sure render you warm and with a feeling of home. The variety of banitsas in Bulgaria is quite impressive – from simple one with cheese to one with spanach.

However, we decided to go for the simple – banitsa with cheese. Theingredients are sheets of phillo dough, cheese, eggs and love. After making the filling with smashed cheese and beaten eggs, on every second sheet of the dough there isfilling. Then you put it in the oven and Voila! You have your delicious treat.

History of banitsa is brief, pretty unclear too. It is rumored that it came along with Slavic tribes more than 1000 years ago. Though there is no real evidence, research (and logic) suggests that banitsa was a part of the Bulgarians cuisine for centuries because it was made on every major holiday.

Either way, the real old history-full thing about banitsa is the cheese.
