Weight Watchers Chicken and Stuffing Crockpot Recipe

I got this excellent, super easy Weight Watchers Chicken recipe with Stuffing for the crockpot aka a slow cooker from my mom. It’s comfort food without a million calories. My mom once lost 110 pounds on Weight Watchers, so needless to say I believe in the system after seeing the results firsthand.

I have personally never done the program, but I do love many of the recipes. I did do a weight loss program last year, Optavia, and ended up losing 36 pounds. For me this was massive. I had just hit the highest weight of my life and my now ex-husband had just walked out on us. I needed to make a change, I had to make a change.

I felt immensely proud of myself for losing that weight and still do. I enjoy the program so much I became anOptavia health coach. So, if you are looking for a program email me. The program is not for everyone, but for busy moms like me, it’s ideal.

No matter what diet you may or may not be trying it always pays off to eat healthier. I try to do this year-round, any time we are not traveling. As you can imagine when we are traveling, we are eating fairly heavy foods most of the time.
We enjoy this particular recipe so much that we once decided to have this Weight Watchers chicken and stuffing crockpot recipe for Christmas Eve instead of doinga whole Christmas meal. It was less work for everyone, only four ingredients! Plus, it was less calories than making a large Christmas dinner. And we are all about cutting calories.

Weight Watchers Chicken Recipe with Stuffing (7 Points)

Ingredients:

6 whole boneless, skinless chicken breasts. You can also use chicken thighs if you want and yes, you can use frozen chicken.

1 box stove top stuffing mix or any brand of dry stuffing mix

1 can 98% fat-free cream of mushroom soup — or any low fat cream soup like cream of chicken soup.

1/2 cup water or chicken bouillon

Directions:

Spray a 3 1/2 quart crockpot with cooking spray. Add chicken breasts. Combine stuffing, soup, and liquid. Spread over chicken. Cook on low 6 to 8 hours.

Per serving: 321 calories; 6 g fat; 56 g protein; 7 g carbohydrate; 1 g dietary fiber.

I’ve had a few people ask about adding ingredients. I don’t see why not. Obviously, if you add stuff it will change the nutritional values. Some things you could add are green beans, celery, and onion. Also, I do not add salt and pepper, but you could do that as well. I tend to never use salt.

Crockpot Weight Watchers Chicken Stroganoff

Ingredients:

1 lb boneless, skinless chicken breast

1 can 98% fat-free cream of mushroom soup

16 oz fat-free sour cream

1 envelope dry onion soup mix

1 or 2 cans mushrooms, drained (optional)

Directions:

Put the chicken in the bottom of a crockpot. It’s okay if the chicken is frozen.

Mix in soup, sour cream, onion soup mix,and mushrooms. Once combined pour over the chicken.

Cook on low for 7 hours.

Serve over rice or egg noodles

Serves 6

Each serving = 4.5 points Plus points for the rice or noodles.
