Whipping cream
Cream – Fløte
Cream is found in the refrigerator section, usually close to the milk. The three standard cream products are sold in small, usually orange-coloured cardboard cartons, like a mini-version of a milk carton. These include:
Kremfløte contains 38% fat and can be whipped into solidity. It is equivalent to whipping cream in the UK. There is no equivalent to double cream, but generally Krem fløte can be used as a substitute.
Matfløte has 20% fat. It is equivalent to single cream in the UK.
Lactose free (laktosefri) versions are available for Kremfløte and Matfløte.
Kaffefløte is another pouring cream, suitable for use in coffee. It contains around 10% fat.
Lett Dessertfløte is mildly vanilla flavoured cream, with 25% fat. It can be poured or whipped.
Kremtopp is a spray cream, similar to the sweetened spray creams available in the UK.
Semi-skimmed milk, with (blue) and without (pink) vitamin D
Milk – Melk
Milk comes in various types and is currently only available in small (250ml, 1litre, or 1.75litre) cardboard cartons Hel (whole milk) contains 3.5% fat. It comes in a red carton.
There are two types of semi-skimmed milk. Lett melk comes in a dark pink carton and contains roughly 1% fat. Ekstra lett melk comes in a turquoise-blue carton. It contains slightly less fat (about 0.7%) but is fortified with vitamin D.
Skummet (skimmed milk) has 0.1% fat. The carton is mostly white, with light pink writing.
Kultur mjølk is a soured milk product, similar to unsweetened yoghurt drinks. It comes in a light blue carton and comes in different forms; skimmed (skumma), organic (økologisk)and full fat (hel).
Soured cream – Rømme
This is available in various forms from setterømme (the highest fat product) to ekstralett. It can also be obtained in lactose free (laktosefri) and organic (økologisk) forms.
Butter – Smør
Butter comes in threevarieties in Norway; regular, salted butter (Ekte Meierismør), unsalted (Usaltet Meierismør) and a special type of butter called Kviteseidsmør, which is churned from soured cream.
There are a very limited number of butter products available in comparison with the UK. If it doesn’t have the word smør, then it is not butter. There are a number of solidmargarine-type products such as Melange which are suitable for baking.
