I saw Felicia Fitness make this Taco pie recipe on her youtube channel and adapted it to what I like. If you haven’t checked out her channel on youtube yet, you should. I previously had a Taco Pie recipe on this blog that wasn’t very WW friendly that called for crescent roll dough as the pie crust. That was delicious but kind of high in points. This version of taco pie is much more WW friendly and the post has been updated to include points and nutrition info.

Why You Will Like This Recipe

I like my tacos with ground beef and love that I can easily find 96% lean ground beef at either Aldi or Wal-Mart now. Ground beef is something I pick up every week for groceries. Ground turkey or ground beef can be substituted for the ground beef.

The tortilla I used was La Banderita Carb Counter tortillas. Ole Extreme Wellness brand is very similar and both are only 1 point for a tortilla.

I don’t have any issues using fat-free cheese so if you change the cheese up a bit make sure to change it in the recipe builder. It will be more points.

  • Lean ground beef- Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
  • Yellow onion, chopped
  • Low sodium taco seasoningIs a blend of spices used to flavor ground beef or other meats for use in tacos. It typically includes a combination of chili powder, cumin, garlic powder, onion powder, paprika, and sometimes salt and pepper. It can be purchased pre-mixed, or made at home using individual spices. I usually buy the Lower Sodium Taco Seasoning packets such as Mrs Dash.
  • Crushed tomatoes - When purchasing canned diced tomatoes, it is important to read the label and choose a product with no added salt or sugar if you are looking for a healthier option.
  • Frozen corn - Some people prefer fresh or frozen corn for its taste and texture. Use whatever you like.
  • Tortillas such as Ole Extreme Wellness or La Banderita, make sure they are roughly 6 in
  • Shredded cheddar cheese - has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
  • Green onions were used as garnish

How to make Taco Pie

Step 1: Preheat oven to 350. Brown the ground beef, onions, and taco seasoning in skillet. Add crushed tomatoes and corn and simmer for 5 minutes or until fully heated.

Step 2: Spoon 1 cup of mixture into round pie plate dish. Cover with 3 tortillas and top with another 2 cups of meat mixture and ½ cup of cheese.

Step 3: Cover with remaining tortillas, then remaining meat mixture and cover with foil. Bake for 25 minutes. Top with remaining cheese and bake another 5 minutes uncovered until cheese melts.

What to Serve with Taco Pie

  1. Salad
  2. Guacamole: You can easily make your own by mashing avocados, diced tomatoes, onions, and lime juice together, or you can purchase it pre-made at the store. Try Alton Brown's Guacamole Recipe.
  3. Salsa: A bowl of fresh salsa can be a nice way to add some extra flavor and crunch to your taco pie. You can make your own salsa by dicing tomatoes, onions, and peppers and mixing them together with lime juice and fresh herbs. Check out this recipe for zero point salsa. Zero Point Salsa
  4. Refried beans: You can make your own by cooking and mashing pinto beans with spices and a little bit of water, or you can purchase them pre-made.
  5. Chips and dip: A basket of chips and your choice of dips (such as salsa, guacamole, or queso) can be a fun and casual way to serve taco pie.

  • 1 pound 96/4 lean ground beef
  • 1 medium yellow onion, chopped
  • 1 1oz packet of low sodium taco seasoning
  • 1 15 oz can of crushed tomatoes
  • 1 ½ cups of frozen corn
  • 6 6" tortillas such as Ole Extreme Wellness or La Banderita
  • 1 cup fat-free shredded cheddar cheese
  • Green onions were used as garnish

Instructions

  1. Preheat oven to 350.
  2. Brown meat, onions and taco seasoning in skillet. Add crushed tomatoes and corn and simmer for 5 minutes or until fully heated.
  3. Spoon 1 cup of mixture into round casserole dish. Cover with 3 tortillas and top with another 2 cups of meat mixture and ½ cup of cheese.
  4. Cover with remaining tortillas, then remaining meat mixture and cover with foil. Bake for 25 minutes. Top with remaining cheese and bake another 5 minutes uncovered until cheese melts.
  5. Cut the pie into 6 equal portions, serving size: 1 slice.

    I can't wait to try this recipe. I am thinking of adding beans to it. Should I do that in the first baking process and mix it with the meat mixture. This looks so good. Thanks for sharing. I am on WW now and I appreciate the wonderful recipes and honestly it keeps me cooking and enjoying it.

    I use the WW recipe builder to calculate the points for the recipes and that is what I have been using for years. Not sure what app you're using to get that.
