  • 1 green onion, chopped
  • ½ cup grapes, chopped
  • 1 orange, peeled and segmented
  • ½ cup frozen peas

Next, make your rice. Read the directions on the back of your package of Uncle Ben's Jasmine rice or your favorite microwavable rice. Ours encouraged us to break up the rice before opening the top and placing it in the microwave for 2 minutes.

While the rice is cooking, have your child chop the grapes, oranges, and green onions. You can also chop them together. We placed all of the chopped fruit and vegetables in a large bowl and added in the cooked peas.

Add the soy sauce and mango juice in a 1:2 ratio for a delicious dressing. You could also add salt and pepper, but we try to avoid that with the kids.

Spoon the rice mixture out into individual servings and then add the shrimp, if desired.

If your child prefers the rice without the shrimp that is fine too. This fruity rice makes kids happy and tastes delicious.
