Tips for the Easiest Bisquick Drop Dumplings

  • Don’t overmix the dough. Stir the Bisquick mix and milk until just combined. Overmixing will result in hard dumplings.
  • Use a cookie dough scoop or spoon for similar-sized dumplings. Drop the uniform-sized dough into the simmering soup and they’ll cook evenly with consistent results.
  • Simmer gently instead of boiling the soup to prevent the dumplings from falling apart. Don’t stir the dumplings after dropping the dough into the pot. Adjust the heat and keep it LOW for a steady simmer. A rolling boil will destroy your delicate dumplings.
  • Use leftover chicken or rotisserie chicken to save time. This will further the cook time. Remember that the chicken is already cooked, so not to overcook it. Just add in the rotisserie chicken at the end, after your dumplings are cooked.

How to Make Bisquick Dumplings

This recipe is super easy to make and here’s how it goes:

Make the Soup: Sauté carrots, celery, and onions in a large pot, then add chicken broth and bay leaves. Season with salt and pepper. Bring it to a boil. Reduce heat, and simmer covered for about 5 minutes or until vegetables are tender. When the vegetables are tender, transfer them to a plate.

Make the Dough: Combine Bisquick mix and milk in a mixing bowl. Mix until just combined.

Cook Bisquick Dumplings: Spoon out a piece of Bisquick dumpling dough and drop it into the soup. Repeat this process until you’ve used up all the Bisquick dough. Simmer for about 15-20 minutes or until the dumplings are fully cooked.

Add chicken and vegetables: Add shredded chicken and vegetables into the broth. Season with more salt and pepper if needed, and cook for about 3 minutes or until heated through.

    How Do I Know If My Bisquick Dumplings Are Done?

    Insert a toothpick into the center of the dumplings. If it comes out clean without any wet dough attached, your dumplings are ready.

    Store the soup and dumplings in separate airtight containers. They’ll last for about 3 days in the fridge and up to 3 months in the freezer.

    Ingredients

    For the Soup

    • 1 tablespoon olive oil
    • 2 cups mixed vegetables cubed, I used onions, carrots, and celery
    • 6 cups chicken broth plus more if needed
    • 2 pieces bay leaves
    • salt & pepper to taste

    Bisquick Dumplings

    Chicken

    • 2 cups shredded cooked chicken use store-bought rotisserie chicken to save time, or you can boil whole chicken from scratch

    Instructions

    Make the Soup

    • Add oil to a large dutch oven or pot over medium-high heat.

    • Add onions, carrots, and celery. Sauté for about 5 minutes or until vegetables begin to soften.

    • Add chicken broth and bay leaves. Bring to a boil, and season with salt and pepper to taste.

    • Let the soup gently boil for about 5 minutes or until vegetables are tender. While the broth is simmering, prepare Bisquick dumplings below.

    Make Bisquick Dumplings

    • In a large mixing bowl, mix the bisquick mix and milk until just combined. (Don't overmix your dough)

    Cook Bisquick Chicken and Dumplings

    • When the vegetables are tender. Remove them from the soup.

    • Reduce the heat, and spoon out a piece of Bisquick dumpling dough using a cookie dough spoon and drop it into the soup. Repeat this process until you used up all the Bisquick dough.

    • Simmer uncovered for 10 minutes, and cover with a lid and cook for another 5-10 minutes or until the dumplings are cooked through.

    • Add shredded chicken and vegetables into the broth, and season with more salt and pepper if needed. Cook for about 3 minutes or until heated through.

    Notes

    • To avoid your dumplings from falling apart, make sure to remove the vegetables first. Don’t stir the dumplings after dropping the dough into the pot. Just let them simmer. Keep the heat low so that the broth gradually simmers. A rolling boil will destroy your delicate dumplings.
    • Can You Make Bisquick Chicken and Dumplings in a Slow Cooker? Yes, simply add all ingredients except the dumplings to the slow cooker and cook on high for 3 hours. About 30 minutes before dinnertime, add in your dumplings to complete the meal. If you’re using rotisserie chicken, don’t add it in until 30 minutes before you’re ready to eat.
    • How to thicken the soup: If you prefer a thicker and heartier soup, you’ll need some cornstarch. Add the cornstarch and water mixture ( 1 tablespoon of each) to the boiling broth, stirring constantly until the soup has thickened.

      We have made this twice!!! The first time I used too much salt. My twins really liked it which was crazy, they’re such picky eaters. Instead of bisquick, I slightly cook frozen biscuits, then pull them apart and drop them in. For me it’s much quicker as a busy mom. Love it. Thank you so much

      I’ve been making this soup for yrs it’s a neighborhood favorite, but after my soup and dumplings are done I like to pop it in the oven,pot and all on broil for a few minutes, puts a nice golden brown top on the dumplings. I prefer to not have them so super soft and everyone loves them ,, just my little twist on them. Their delicious plus I sprinkle a little seasoning on them before they go into the oven..

      Tried this recipe with what I had on hand, using rotisserie chicken and the Cheese Garlic Bisquick mix, omitted the celery. The garlic added flavor to the dumplings. Wish I had use large pack of Bisquick for more dumplins. Easy stove top recipe.
