John Kirkwood published this recipe in June 2019, but sourdough has surged in popularity recently, after Covid-19 caused millions of people to be locked at home, and therefore many have taken to cooking… and there has been a yeast shortage.
You can use this sourdough starter to make more and more yeast – it should literally last forever.

Ingredients
- 1 Sourdough yeast starter packet (or scraps from a previous sourdough)
- 100g plain white bread flour
- 120ml of lukewarm bottled water
- 300ml of room temperate bottled water
- 260g bread flour
- Equal parts flour and water to “feed” your yeast
Method
- Mix the yeast with the flour
- Add the lukewarm water and mix until smooth
- Clean down the sides of the bowl, then cover with plastic wrap
- Pierce 1 hole in the centre of the cling film
- Leave at room temperature to develop for 24 hours – around 21 degrees C
- The next day – in a larger bowl, pour 300ml of room temperature water
- Add the active sourdough mix into this water, and mix until it’s all combined
- Add 260g of bread flour to this mixture and mix
- Clean the sides of the bowl with a spatula, cover with cling film, and pierce a hole in the centre
- Leave at room temperature for 4 to 5 hours
- Pour your mixture into the container you will use for storage – make sure it has a hole in the top
- Add some flour to feed the yeast – same amount of flour as water (say 200g flour 200ml of water) so your container is 3/4 full.
- Put this into the fridge – its ready for when you need it to make sour dough.
- Every week, take half your sourdough out (cook with it!) and then refill with equal parts flour and water.
- This will keep you in sourdough yeast forever!
