Smoked Pork Loin 3-2-1 Method with Dirty Dalmatian Rub
I did a small pork loin like I do ribs and I can happily say it was a delicious result. Even got a nice smoke ring in it and everything. Both the ribs and pork loin turned out perfectly. I used the dirty dalmatian rub and the 3-2-1 cook method (3 hours uncovered, 2 hours covered and then opened up to cook for an another 30 minutes to an hour.
After the first hour of cooking I sprayed apple juice on the meat every 15 to 20 minutes and when I wrapped the meat I put brown sugar and butter on top and about 1/4 cup of apple juice in the bottom of the foil).
