When I lived inUtah, there was a store called Great Harvest Bread Company near where I worked. That location made the best vegetarian sandwich. My favorite part was the roasted red pepper spread. Unfortunately, that location closed and the other locations didn’t make the same sandwiches.

Now, years later, I’m back where I grew up on the East Coast and finally have my own version of Roasted Red Pepper Spread. I can’t honestly say it’s an exact duplicate for the original since it’s been so long, however, I can say it’s pretty darn good! And, I still enjoy it on a vegetarian sandwich among many other uses.

The prep work for this recipe is very minimal. It is recommended to mince the garlic beforehand. Drain the peppers and pat dry with a paper towel.

Tip: jarred peppers work just as well as fresh in this recipe, however, if you prefer to roast your own, you can.

Create!

Toss all of the ingredients into a food processor bowl fitted with a blade and process until you reach the desired level of chunkiness (or smoothness).

If you are going to be using this spread as a dip, spoon it into a nice serving bowl and add some extra diced roasted red peppers and a sprinkle of basil on top.
